This Sweet Potato Breakfast Casserole is so easy to make and requires just a few ingredients. You will need 4 to 5 medium sweet potatoes, diced and roasted. You will also need 1/2 cup of cooked quinoa, 1/4 cup of diced red onion, 1/4 cup of diced red bell pepper, 1 tablespoon of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of sea salt, and 1/4 teaspoon of freshly ground black pepper.
Instructions
Once the potatoes are done, combine them in a large bowl with the cooked quinoa, diced red onion, and diced red bell pepper. Spread the mixture into a greased 9x13 inch baking dish. Bake for 20 minutes at 350°F.
Add More Protein
If you are looking for an even heartier breakfast, add some cooked black beans or diced tofu to the casserole. This will add a good source of protein and make the meal more filling. You can also add some cooked turkey bacon or sausage to the dish if you are not vegan.
