Ingredients



This Sweet Potato Breakfast Casserole is so easy to make and requires just a few ingredients. You will need 4 to 5 medium sweet potatoes, diced and roasted. You will also need 1/2 cup of cooked quinoa, 1/4 cup of diced red onion, 1/4 cup of diced red bell pepper, 1 tablespoon of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of sea salt, and 1/4 teaspoon of freshly ground black pepper.

Instructions



To make this Sweet Potato Breakfast Casserole, preheat your oven to 400°F. Line a baking sheet with parchment paper and spread the diced sweet potatoes on it. Sprinkle the olive oil, smoked paprika, garlic powder, sea salt, and black pepper over the potatoes and toss to coat. Roast the potatoes in the oven for 25 minutes, stirring halfway through.

Once the potatoes are done, combine them in a large bowl with the cooked quinoa, diced red onion, and diced red bell pepper. Spread the mixture into a greased 9x13 inch baking dish. Bake for 20 minutes at 350°F.

Add More Protein



If you are looking for an even heartier breakfast, add some cooked black beans or diced tofu to the casserole. This will add a good source of protein and make the meal more filling. You can also add some cooked turkey bacon or sausage to the dish if you are not vegan.

Top with Delicious Toppings
