Ingredients Needed

This recipe serves four people. For this recipe, you will need: four chicken breasts, 1 cup of teriyaki sauce, 1/2 cup of honey, 2 cloves of garlic, 1 tablespoon of ginger, 1 teaspoon of sesame oil, 1/4 cup of toasted sesame seeds, 2 tablespoons of vegetable oil, 4 cups of cooked white or brown rice, 1/2 cup of chopped green onions, 1/2 cup of chopped red bell pepper, and 1/2 cup of chopped carrots.

Instructions

To make the marinade, combine the teriyaki sauce, honey, garlic, ginger, and sesame oil in a small bowl and mix until fully combined. Take the chicken breasts and place them in a large resealable bag. Pour the marinade over the chicken and let it marinate for at least 30 minutes in the refrigerator.

When the chicken is finished marinating, heat a large skillet over medium-high heat and add the vegetable oil. When the oil is hot, add the chicken and the marinade to the skillet and cook for about 10 minutes, flipping the chicken halfway through. Once the chicken is cooked through, remove it from the skillet and set aside to cool.

In a separate bowl, combine the cooked rice, toasted sesame seeds, green onions, bell pepper, and carrots and mix until fully combined. Once the chicken has cooled, cut it into cubes and add it to the bowl with the rice mixture. Mix until everything is well combined.

Divide the chicken teriyaki meal prep into four containers and store them in the refrigerator for up to five days. When ready to eat, simply microwave for two minutes or until heated through.
