- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced

- 1 can of red kidney beans, drained and rinsed
- 1 cup of dried lentils
- 2 tablespoons of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of smoked paprika
- 1 teaspoon of chili powder
- 1 teaspoon of oregano
- 2 tablespoons of tomato paste
- 4 cups of vegetable broth
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, and bell pepper and sauté until the vegetables are softened, about 5 minutes.
3. Add the black beans, red kidney beans, lentils, cumin, smoked paprika, chili powder, oregano, and tomato paste and stir well to combine.
4. Add the vegetable broth and stir to combine.
5. Bring the mixture to a boil, reduce the heat to a simmer, cover, and simmer for 20 minutes or until the lentils are cooked through.
6. Taste and season with salt and pepper as needed.
