Steps to Prepare
Preheat the oven to 375 degrees Fahrenheit. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut side down on a baking sheet and bake for 30 minutes, until tender.
Meanwhile, in a large bowl, combine the diced tomatoes, onion, bell pepper, garlic powder, Italian seasoning, and salt and pepper. Mix until combined.
Once the squash is done baking, scrape out the flesh with a fork and add it to the tomato mixture. Mix until combined.
