Ingredients
For the Stew
- 2 lbs. beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 4 cups beef stock
- 2 bay leaves
- 2 carrots, peeled and sliced
- 2 stalks celery, sliced
- 2 potatoes, peeled and cubed
- 1 cup frozen peas
- Salt and pepper to taste
For the Herb Seasoning
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
Instructions
Step 1: Brown the Meat
Heat the olive oil in a large pot over medium heat. Add the beef and cook until it’s browned on all sides. Once the meat is browned, remove it from the pot and set aside.
Step 2: Sauté the Vegetables
Add the onions and garlic to the pot and cook for about 5 minutes, or until the onions are softened. Then add the tomato paste, oregano, basil, thyme and the herb seasoning mix. Stir to combine and cook for an additional minute.
Step 3: Simmer the Stew
Add the beef stock, bay leaves and the beef back to the pot. Bring the mixture to a simmer and cover. Cook for 1 hour.
Step 4: Add the Vegetables
After the stew has cooked for an hour, add the carrots, celery, potatoes and peas. Cover and cook for an additional 30 minutes.
Step 5: Serve and Enjoy!
Once the stew has cooked for the additional 30 minutes, remove the bay leaves and season with salt and pepper to taste. Serve in bowls and enjoy!
