Chicken Fajitas
This is one of our favorite low fat crock pot dinners. Start by cutting up two large boneless, skinless chicken breasts into thin strips. Place the chicken in the crock pot, along with one diced onion, one minced clove of garlic, one diced green pepper and one diced red pepper. In a small bowl, combine one teaspoon of chili powder, one teaspoon of cumin, one teaspoon of paprika, one teaspoon of oregano, one teaspoon of garlic powder, one teaspoon of onion powder, one teaspoon of sea salt and one teaspoon of black pepper. Add the spice mixture to the crock pot and stir to combine. Add one cup of chicken broth and one cup of salsa and stir to combine. Cover and cook on low for five to six hours, or until the chicken is cooked through and the vegetables are softened.
Beef and Broccoli
This is another delicious and low fat crock pot dinner. Start by cutting one pound of lean beef, such as sirloin, into thin strips. Place the vegetables in the crock pot, along with one can of diced tomatoes, one can of kidney beans, one can of black beans, one can of corn and two cups of vegetable broth. In a small bowl, combine one teaspoon of oregano, one teaspoon of thyme, one teaspoon of basil, one teaspoon of sea salt and one teaspoon of black pepper. Add the spice mixture to the crock pot and stir to combine. Cover and cook on low for five to six hours, or until the vegetables are softened.
Lentil Curry
This is another delicious and low fat crock pot dinner. Start by dicing one onion, one carrot, one stalk of celery and one red pepper. Place the vegetables in the crock pot, along with two cups of cooked red lentils, one can of diced tomatoes and two cups of vegetable broth. In a small bowl, combine one teaspoon of curry powder, one teaspoon of turmeric, one teaspoon of cumin, one teaspoon of sea salt and one teaspoon of black pepper.
