Healthy Lentil Soup Recipe Slow Cooker

What you will need



For this lentil soup recipe you will need:

-2 tablespoons olive oil
-1 onion, diced
-2 cloves garlic, minced
-2 carrots, diced
-2 celery stalks, diced
-1 teaspoon cumin
-1 teaspoon paprika
-1 teaspoon oregano
-1 teaspoon thyme
-1/2 teaspoon black pepper
-4 cups vegetable broth
-2 cups lentils, rinsed
-2 cups diced tomatoes
-1/4 cup chopped fresh parsley

Instructions



1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until the onion is translucent.

2. Add the diced carrots and celery and cook for 2-3 minutes.

3. Add the cumin, paprika, oregano, thyme and black pepper and cook for another minute.

4. Pour in the vegetable broth and lentils and bring to a boil. Reduce the heat to low and simmer for 20 minutes.

5. Add the diced tomatoes and simmer for another 10 minutes.

6. Place the soup in a slow cooker and cook for 4-6 hours on low or 2-3 hours on high.

7. Serve with a sprinkle of fresh parsley and your favorite toppings. Enjoy!
