Instructions

2. Add the diced carrots and celery and cook for 2-3 minutes.

4. Pour in the vegetable broth and lentils and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
5. Add the diced tomatoes and simmer for another 10 minutes.
6. Place the soup in a slow cooker and cook for 4-6 hours on low or 2-3 hours on high.
