  • 4 medium-sized over-ripe bananas
  • 2 cups of all-purpose flour
  • 1/2 cup of light brown sugar
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of ground nutmeg
  • 1/2 cup of walnuts, chopped
  • 1/2 cup of canola oil
  • 2 eggs, lightly beaten

Instructions

Follow these simple instructions to make this delicious low fat banana nut bread recipe:

  1. Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan with non-stick cooking spray and set aside.
  2. In a medium bowl, mash the bananas until smooth. Add in the oil and eggs and mix until well combined.
