Pumpkin Soup Recipe – Easy, Healthy and Delicious!
Fall is just around the corner, and that means it’s time to start thinking about all the delicious seasonal recipes that come with it! One of the best recipes of the season is pumpkin soup. Not only is it easy to make, but it’s also incredibly healthy and delicious. Plus, pumpkins are low in calories and packed with vitamins and minerals.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 4 cups of vegetable broth
- 1/2 teaspoon salt
- 4 cups of pumpkin puree
- 1/4 cup of heavy cream
- 1/4 teaspoon of freshly ground black pepper
- Optional garnishes: pumpkin seeds, croutons, grated cheese, and/or chopped parsley
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes. Add the cumin and cook, stirring, for 30 seconds.
2. Add the vegetable broth, salt, and pumpkin puree to the pot and stir to combine. Bring the soup to a boil, then reduce the heat and simmer for 10 minutes.
3. Remove the soup from the heat and blend with an immersion blender until smooth. Alternatively, you can blend the soup in batches in a blender or food processor. Be sure to blend in batches and blend slowly to avoid splattering.
4. Stir in the heavy cream and season with salt and pepper to taste. Serve the soup in individual bowls with your choice of garnishes, such as pumpkin seeds, croutons, grated cheese, and/or chopped parsley.
