Healthy Butternut Squash And Sweet Potato Soup

Instructions
To begin, preheat your oven to 400°F. Cut the butternut squash and sweet potato in half, and scoop out the seeds. Place the squash and sweet potato on a baking sheet, and drizzle with 1 tablespoon of olive oil. Roast in the oven for 30-35 minutes, or until the vegetables are tender.
While the vegetables are roasting, heat the remaining tablespoon of olive oil in a large pot over medium heat. Add the onions and garlic, and sauté for 4-5 minutes, or until the onions are translucent. Add the vegetable broth, cumin, smoked paprika, cinnamon, salt, and pepper. Bring to a boil, reduce heat and simmer for 10-15 minutes.
Remove the roasted vegetables from the oven. Scoop the flesh from the squash and sweet potato and add it to the pot. Use an immersion blender to puree the soup until it's smooth and creamy. If you don't have an immersion blender, you can use a regular blender. Just be sure to blend in batches, and be careful when blending hot liquids.
Taste and adjust seasoning as needed. Serve warm with your favorite toppings. Enjoy!
