You’ll need: cooked chicken, uncooked quinoa, cooked black beans, cooked corn, bell peppers, red onion, cherry tomatoes, shredded cheese, avocado, cilantro, olive oil, lime juice, cumin, chili powder, garlic powder, salt, and pepper.

Start by prepping all of your ingredients before you start building your taco bowls. Cook the chicken, quinoa, black beans, and corn, and dice the bell pepper, red onion, and cherry tomatoes. Once all of your ingredients are prepped and cooked, you’re ready to start assembling your bowls!

Assembling the Healthy Chicken Taco Bowls

Start by adding 1/2 cup of cooked quinoa to the bottom of each bowl. Then, add 1/2 cup of cooked black beans and 1/2 cup of cooked corn to each bowl. Top each bowl with 1/2 cup of cooked chicken, bell peppers, red onion, and cherry tomatoes. Sprinkle 1/4 cup of shredded cheese over each bowl, and then top each bowl with 1/2 an avocado, diced.

In a small bowl, whisk together 1/4 cup of olive oil, the juice of 1 lime, 1 teaspoon of cumin, 1 teaspoon of chili powder, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Drizzle the dressing over each bowl, and top with fresh cilantro. Serve your Healthy Chicken Taco Bowls immediately, or store in the refrigerator for up to four days.
