Ingredients
• 500g potatoes, peeled and cut into cubes
• 5 tablespoons of butter
• 3 tablespoons of plain flour
• 600ml of fish stock
• 500g of fish fillets, cut into cubes
• 200g of spinach leaves
• 1 tablespoon of lemon juice
• Salt and pepper, to taste
Instructions
1. Begin by boiling your potatoes in a pot of salted water. Cook them until they’re tender, then drain and mash.
2. In a separate pan, melt the butter and add the flour. Stir together until you have a paste, then slowly add the fish stock, stirring until the mixture thickens.
3. Add the fish, spinach, lemon juice and seasonings, and simmer for a few minutes.
4. Transfer the fish and spinach mixture to an ovenproof dish. Top with the mashed potatoes and bake in a preheated oven at 200°C for 25 minutes, or until the top is golden brown.
Serving Suggestion
