  • 2 cups low-sodium chicken broth
  • 1 (15-ounce) can diced tomatoes, undrained
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 3 tablespoons chopped fresh parsley

Instructions for Heart Healthy Chicken Stew



In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken and cook, stirring occasionally, until it's lightly browned. Remove the chicken from the pot and set aside.

Add the onion, garlic, bell pepper, carrots and celery to the pot and cook until tender, about 5 minutes. Add the thyme, oregano, salt, pepper and smoked paprika and stir to combine.

Return the chicken to the pot, add the chicken broth and tomatoes and stir to combine. Bring the mixture to a simmer, reduce the heat to low, cover and cook for 20 minutes.

In a small bowl, combine the cornstarch and cold water and stir until smooth. Add the cornstarch mixture to the pot and stir until it's completely incorporated. Continue to cook, stirring occasionally, until the stew is thickened and the chicken is cooked through, about 10 minutes.

Remove the pot from the heat and stir in the fresh parsley. Serve the stew with crusty bread or over cooked rice or noodles.
